Drunken Gingerbread Man Cupcakes

These adult cupcakes are a fun way to spice up any party. I made these for a Christmas party I attended and they were a hit. Who doesn’t love a boozy yet fun cupcake?!

This recipe is really simple. Because I was recovering from my C-Section I decided to keep the recipe as simple as possible. I used boxed spice cake, but you are welcome to use any spiced cake with ground ginger or even your own gingerbread flavored cupcakes with spiced rum.

Drunken Gingerbread Man Cupcakes

Easy Gingerbread Spiced Rum Cupcakes with a Spiced Rum Buttercream and Gingerbread Man Garnish

Ingredients

1 box of Spice Cake Mix
1 tsp. Ground Ginger
Spiced Rum (enough to replace the water in your cupcake recipe, I used Captain
Morgan Private Stock)
Gingerbread Cookies (1 for each cupcake, I used Pepperidge Farm as seen here, but any gingerbread man cookies would work)

Spiced Rum Buttercream (Recipe Below) (Vanilla Icing would work as well)

Directions

1.) Prepare your cupcakes according to the box instructions, but replace the water with Rum!

2.) Stir the ground ginger into the batter.

3.) Fill Cupcake liners 2/3 full and bake according to the package directions.,

4.) Once the cupcakes are done or until a toothpick inserted in the center comes out clean.

5.) For additional flavor I brush some of the Captain Morgan Spiced Rum on top of the cupcake using a pastry brush.

 

Spiced Rum Buttercream

Easy Spiced Rum Buttercream

Ingredients

1 cup unsalted butter, softened
5 cups powdered sugar
½ teaspoon cinnamon
½ teaspoon salt
3 tablespoons spiced rum (or more if desired) (I used Captain Morgan Private Stock,
but any spiced rum should work.

Directions

1.) To make the frosting whip the butter with a whisk attachment. Add the powdered sugar a cup at a time. After 3 cups add the cinnamon and salt. Beat to combine.

2.) Add the last 2 cups of frosting and the rum. If you like a thinner frosting add more rum.

3.) Once the frosting is to your desired consitancy and flavor, pipe them onto the cooled cupcakes.
