Baking and Dessert Diva

Baking has always been a passion of  mine. I began baking at 5 years old with my mother who raised me. We would spend countless hours in the kitchen baking cookies, cakes, and other amazing desserts. Even after my mother passed away in 2002 I continued baking and began creating desserts and recreating some basic classic recipes.

Here I will share my favorite recipes from my collection and some of my favorites I discover as I go along. Hope you enjoy these as much as i do!

Reeces Peanut Butter Cupcakes

Reeces Peanut Butter Cupcakes

Reece’s Peanut Butter Cupcakes

These cupcakes are the Surviving Mother’s favorite. They are a huge hit at parties and never last more than a few hours! These are super moist chocolate cupcakes with a peanut butter buttercream with a bittersweet chocolate ganache and topped with a Reece’s Peanut Butter Cup!

Bananas Foster

Banana’s Foster Cupcakes

Banana’s Foster Cupcakes

These cupcakes are complicated to make, but well worth the effort! Rather than the overly sweet cream cheese buttercream most bakers opt for, I topped these cupcakes with a Swiss meringue cinnamon rum buttercream. I love Swiss meringue for its subtle sweetness and heavenly texture. The buttercream is light and fluffy with lots of flavor.

This Samoa Bundt Cake is an adaption of the famous cookie and it is absolutely amazing! This is A Samoa in cake form. A rich, brown sugar cake marbled with a chocolate cake, topped with a dulce de leche coconut buttercream and drizzled with chocolate. It’s positively sinful.

Blueberry Lemon Bundt

Lemon Blueberry Bundt w/ Lemon Glaze

Sometimes you just want a cake that has fresh flavors and this cake delivers. The cake is soft, moist, fluffy, and dense enough to be satisfying without being heavy. It’s packed with sweet, juicy blueberries and while there’s lemon in the batter, it’s the lemon glaze that really brings out the tartly-sweet lemon flavor that complements the blueberries so well.
